Pacific Rim

PACIFIC RIM

Celebrating the culinary traditions of Asia, Pacific Rim delights guests with the perfect balance of delicious flavors and Zen-like ambiance. The restaurant is located on Deck 5, and the interior glows with muted lighting that illuminates intricate architectural details. During dinner, guests are treated to incredible ocean views through windows designed in an abstract lotus shape, a universal Asian motif. To complement the stunning décor, Pacific Rim’s chefs created a delectable menu of Pan-Asian creations with dishes such as grilled Korean barbecue lamb chops, wok-fried beans, eryngii mushroom and gochujang dressing. Pacific Rim is open for dinner each evening, reservations are required.

Chartreuse

CHARTREUSE

Featuring a modern French menu, Chartreuse evokes memories of a chic Parisian fine dining restaurant discovered during an evening stroll. Located on Deck 10 aft, wherever guests are seated in this regal restaurant, they will be treated to a succulent dinner while enjoying incredible ocean views. The restaurant ambiance is complemented by a menu that features dishes expertly prepared using modern techniques for a multiple course celebration of French gastronomy. Chartreuse is open for lunch on alternate port days and every day at sea, in addition to dinner each evening with reservations.

Prime 7

PRIME 7

A true classic in every sense, the Prime 7 restaurant aboard Seven Seas Explorer personifies luxury at every turn. Handsomely decorated with ingenious uses of glass, metal and granite, you will feel as if you have arrived at an iconic members-only club. Enjoy a cocktail at the bar before being taken to your personal banquette. And after savoring a succulent filet mignon or a mouthwatering côte de boeuf, delight in a digestif and a lively conversation with fellow guests in the comfort of supple leather wing-back chairs.

La Veranda

Located on Deck 11 aft, guests take in stunning ocean views while enjoying elegant breakfast and lunch buffets in the chic indoor dining room or al fresco on the shaded, open-air deck. Breakfasts include traditional favorites, as well as a made-to-order omelet station, a variety of fresh fruits and pastries, along with daily specials, like fluffy Belgian waffles with fresh blueberry compote. For lunch guests indulge in an array of choices from a bountiful salad bar, gourmet sandwiches, hot carving stations and delicious desserts.

In the evenings, La Veranda transforms into the warm and inviting Sette Mari at La Veranda, where tables are candlelit to match the star-filled skies. The menu also transforms into a tantalizing journey of alluring antipasto, perfect homemade pastas, enticing main courses and divine desserts hailing from all over Italy.

Our largest specialty restaurant at sea, this is the perfect setting to enjoy breakfast and dinner. Located on Deck 4, Compass Rose delights with a beautifully defined atmosphere and transitions from refreshing natural light during the day to a romantic ice blue lighting theme at night. The new dinner menu is so encompassing and customizable that it provides guests with a seemingly endless combination of dishes to choose from, prepared to taste, garnished with a sauce of choice and complemented with side dishes and accompaniments. Additionally, each evening the ship’s Executive Chef creates nightly specials, which adds more than a dozen mouthwatering appetizers, pasta dishes and entrée choices to the menu.

Pool Grill

Located on Deck 11, the Pool Grill is open-air, yet abundantly shaded for comfortable dining. Choose your preferred table and one of our attentive staff will take your order. While the atmosphere is deliciously informal, the menu and preparation reflects the same attention to detail as the finest of restaurants. Enjoy grilled-to-order burgers, grilled seafood, sandwiches and fresh salads. Guests enjoy milk shakes, malts, and hand-dipped ice cream desserts sprinkled with all their favorite toppings.

Twenty-four hours a day, guests enjoy everything from a Continental breakfast in the privacy of their spacious balcony to a gourmet dinner served course-by-course, delivered to their suite. The in-suite menu includes a variety of appetizers, entrees, beverages and desserts. During dinner time, the menu expands to include entrée selections from Compass Rose, the largest specialty restaurant at sea.

CULINARY ARTS KITCHEN

The Culinary Arts Kitchen exclusively aboard Seven Seas Explorer provides guests with all of the ingredients to expand their culinary skills in a welcoming environment reminiscent of the most prestigious cooking schools in the world in both layout and design. The 18 culinary workstations are fully equipped with top-of-the-line induction cooktops, stainless steel sinks and a comprehensive collection of cooking essentials. Guests attending the optional classes in the Culinary Arts Kitchen on Deck 11 will receive highly-individualized hands on instruction. The curriculum will appeal to a wide range of tastes and cater to all levels of aptitude, from beginner to experienced chef instructors. Delight in the delectable cuisine of Northern Europe! Among the traditional recipes presented are the Swedish Smörgåstårta and a fish chowder that hails from Estonia.

EVERYTHING FRENCH
As the cuisine to which all others aspire, this class is designed around classic French technique. At the conclusion of the course, guests will know the difference between French bistro and haute cuisine, as well as explore the various regional cuisines of France. This class focuses on classic techniques designed to elevate the kitchen skills of amateur cooks at home.

MAJESTIC MEDITERRANEAN
Participants of this class will master signature dishes selected from Italy, France, Greece, Turkey, and Spain. They will also learn why the Mediterranean diet is celebrated as both healthy and abundant in flavor. Throughout the class, they will sample unique wines from the Mediterranean and discover why they are perfect pairings for the foods of this majestic cuisine.

THE BEAUTIFUL BIRD
This technique-focused class allows participants to master the art of grilling, roasting and sauté. They will also learn about complementing their entrees with perfect side dishes. During the class, guests enjoy a white and red wine sample and taste how both can pair perfectly with the beautiful bird.

GONE FISHING
This class is a master-level instruction on eight techniques for fish cookery; sauté, shallow poach, deep poach, pan fry, curing, ceviche, grilling and baking. Guests will learn these crafts through hands-on work and from the lively demonstrations by their Chef Instructor. Upon completion of this class, learners will be proficient in fish cookery and boast a new confidence in their ability to prepare great fish dishes at home.

LIGHT MY FIRE
This class focuses on the mastery of high heat cooking, whether on a grill or stovetop. Participants will learn the secrets of perfect grilling and sautéing, and how to improve the flavor and consistency of their favorite meats.

AT HOME ITALIAN
In Italy, no dish is more symbolic of home cooking than pasta! In this class, guests learn to make pasta from scratch. They will also master the fundamentals of great pasta cookery, whether using fresh or dried pasta, as well as the art of pairing the ideal sauce with the proper pasta. This class also provides insight on how to buy, store and cook with extra virgin olive oil.

WHO WANTS DESSERT
Finishing a meal with the perfect dessert requires both art and skill. This class broadens the understanding of how to finish a meal to perfection! From the preparation of an artfully designed cheese plate to the selection of delicate dessert wines, guests will learn to elevate their skills and show them off at their next dinner party or entertaining event.

TEATIME AT THE ABBEY
Inspired by the acclaimed PBS series, Downton Abbey, participants will learn how to assemble both a sweet and savory teatime party complete with bubbly cocktails, as well as how to make an English scone and brew a proper pot of English tea. Learners will be amazed at the variety and flavor of the recipes intended to bridge the hours between lunch and dinner.

HEALTHY KITCHEN
There is no need to sacrifice flavor when cooking healthy…and this class aims to prove that very point! The secrets of extra virgin olive oil will be highlighted and participants will learn the art of “healthifying” traditional favorites. Many techniques and recipes for this class are used in the Canyon Ranch® cooking school and spas.

MODERN CLASSICS
Ask any chef what they cook at home and you may be surprised to learn that they enjoy making classic dishes. In this class, learners enjoy a return to the fundamentals of the great American recipes of James Beard, Julia Child and Jacques Pepin…with a modern spin.

THE PERFECT PAIR
This class is perfect for luxury travelers that indulge in fine wines paired with delicious food. Participants will learn how to properly select the right wine for a preferred dish, as well as finding for the right meal to pair with a favorite wine. The curriculum includes cooking several recipes and then pairing them with wines to explore how different varietals complement the dishes.

THERE’S AN “APP” FOR THAT
This class explores trendy and tasty foods to serve as appetizers. Selected from the cuisines around the globe – the Mediterranean, Baltic, Asia, South and Central America and New Zealand – these recipes display great variety and exciting flavors. At the conclusion of this class, learners will be ready to host a fabulous cocktail party with tastes from around the globe.

VIVA FIESTA
Taking inspiration from Spanish tapas, this class provides a robust menu for a tasty Mexican snacking party, including a lesson on how to make the perfect Mexican cocktails.

BRUNCH FAVORITES
Who doesn’t love brunch? For this class, instead of reverting to the “same old” brunch classics, the Chef Instructor has gathered the trendiest recipes. The class also includes a fabulous brunch cocktail buffet.

VIVA ESPAÑA
At the conclusion of this class, amateur chefs will be able to host a Spanish tapas party, complete with delightfully authentic Sangria. The Chef Instructor assembled their favorite tapas recipes from across Spain for a hearty and satisfying menu, including a demonstration of the art of paella.

HEALTHY GREEK
The birthplace of the Mediterranean diet was on the island of Crete and those same fundamentals were used to build the menu for this class. Participants will master plant-based dishes that are hearty and satisfying, and also learn to season meats to optimize their flavor. Lots of extra virgin olive oil and honey will flow during this class as well.

CARIBE
The Caribbean is a celebration of cuisines from all over the world. This class highlights the fresh ingredients and distinctive flavors of this cuisine with recipes that learners will make over and over again at home. Also part of the curriculum is the art of roasting spicy nuts and making a Caribbean cocktail to wash them down.

This excursion offers a memorable day on the Cote d’Azur complete with an exquisite lunch at the restaurant, Chateau Eza. Guests will be hosted by the Chef Instructor from the Culinary Arts Kitchen, as they wander through the open-air seaside market in Nice, known for elegant flowers, photo-perfect fruit and vegetable stalls, and quaint cafes.

NEW! CHEF MARKET TOUR AND TAPAS CLASS – FROM BILBAO, SPAIN
Accompanied by the Chef Instructor from the Culinary Arts Kitchen, participants of this tour visit the Mercado de la Ribera in central Bilbao, followed by tapas and pintxos snacks in Plaza Nova. Guests will also enjoy a short photo stop at the exterior of the famed Guggenheim museum, and then back to the ship for a 90-minute Tapas and Pintxos cooking class for lunch.

Renowned Michelin-starred Master Chef Rene Berard hosts guests at his private property where they enjoy a tour and Provencal cooking demonstration. Under the glass rooftop, guests enjoy the view of beautiful Provence and savor Mediterranean inspired dishes prepared especially for our group.

Guests will shop for the ingredients for their paella cooking class at the Central Market, a fabulously restored and vast modernistic building. After shopping in the market, participants will journey to Malvarrosa Beach for a causal seaside luncheon at one of Valencia’s most popular paella restaurants, La Pepica. Then, they return on board for a private cooking demonstration with the ingredients purchased.

Accompanied by the Chef from The Culinary Arts Kitchen, participants journey to a quaint fishing village for a culinary workshop on fish and fish cookery from a local fish expert. Then they travel to Upper Old Town Tallinn for a short guided tour that includes a photo-stop, which offers up a panoramic view of this enchanting old city.

A tender ride brings guests to the picturesque city walls of St. Malo, where they will enjoy a special meal at the restaurant of Castelbrac, prepared by Chef Julien Hennote. Chef Hennote is the recipient of the prized Escoffier trophy and specializes in using local products to produce his gourmet dishes. At the conclusion of lunch, guests will take a guided walking tour of the old city.

Along with the Chef from The Culinary Arts Kitchen and a local Latvian Chef, participants of this tour enjoy a tour through the Central Market of Riga – deemed a UNESCO World Heritage Site and considered Europe’s largest market and bazaar – where they’ll shop for produce and ingredients that will be used later for a Latvian cooking class and lunch once back on board the ship.

This tour takes guests to Helsinki’s oldest food market where they will shop for produce, fish and Nordic ingredients under the guidance of the Chef from The Culinary Arts Kitchen. These ingredients will later be used for a hands-on cooking class. Along the way, participants enjoy tasting some local specialties at the market and taking in the sights on a brief panoramic tour through the city and along the seaside.

NEW! BALLYMALOE COOKING SCHOOL – FROM CORK, IRELAND
Together with the Chef Instructor from the Culinary Arts Kitchen, guests visit one of the world’s top culinary destinations, Ballymaloe. The estate includes a luxury inn in the Irish B&B tradition, as well as a world- renowned cooking school complete with kitchen gardens, herb gardens, free range chickens, greenhouses, a demonstration kitchen and an impressive culinary and wine shop. After touring the property, participants indulge in an intimate 3-course lunch.

CHEF MARKET TOUR: CANNOLIS & LUNCH WITH WINES – FROM TAORMINA (SICILY), ITALY
Accompanied by the Chef Instructor from the Culinary Arts Kitchen, guests visit the renowned fish and produce market in Catania, learn how to make delicious cannoli from a Sicilian pastry master and cap off the day with lunch and a cooking demonstration at a famed Taormina restaurant with slow food Chef Turi. Wines from Etna’s award-winning Benanti winery will be paired during lunch by the winemaker himself for an authentically Sicilian wine-and-food experience.

CHEF MARKET TOUR: PESTO, PASTA & LUNCH – FROM PORTOFINO, ITALY
Accompanied by the Chef Instructor from the Culinary Arts Kitchen, guests enjoy a short boat ride along the coastline to Rapallo. Upon arrival, they are greeted by Guido, a local culinary expert for tastings of the famous Ligurian olive oil and a guided stroll through the local farmers market. Later, they travel to Recco for an unforgettable pasta making class with a true master followed by a lunch of local specialties and wines.

CHEF TOUR OF CÁDIZ MARKET & TAPAS LUNCH FROM SEVILLE (CÁDIZ), SPAIN
Accompanied by the Chef Instructor from the Culinary Arts Kitchen, guests will stroll through a traditional open-air fish and produce market in the Old Quarter. A spectacularly authentic market, the bounty of southern Spain’s land and sea are meticulously displayed by the local vendors here. The tour includes a tapas lunch at historic El Chato along the seaside.

CITY FOOD MARKETS & MICHELIN 2-STAR LUNCH – FROM BARCELONA, SPAIN
Guests join their Culinary Arts Kitchen Chef Instructor for an insider’s tour of Barcelona’s trendy food and wine scene. They visit the Boqueria and Santa Caterina markets to get acquainted with the ingredients used by both Catalonian chefs in Barcelona’s haute restaurants as well as local chefs. Then, experience an extra virgin olive oil tasting before enjoying lunch at 2-star Michelin restaurant ABaC and an insider’s peek at the kitchens of famed Chef Jordi Cruz.

MARKET-TO-TABLE CHEF TOUR & COOKING CLASS – FROM CORFU, GREECE
Guests embarking on this tour receive a shopping assignment from their Chef Instructor to gather produce, cheeses and specialties at the local market. They also get to enjoy a light lunch at a famed local taverna, before returning on board for a cooking class on Corfu cuisine using the bounty of their foraging efforts.

TUSCAN FOOD & WINE AT PRIVATE VILLA – FROM LIVORNO, ITALY
Guests enjoy a day in the countryside and a truly authentic food and wine experience. They visit the Mercato Centrale with their Chef Instructor and local guide. Seven Seas Explorer offers FREE WiFi access throughout the ship, allowing guests to connect to the Internet with their own device. If a guest prefers to travel without a laptop, the staffed Business Center on Deck 5 offers desktop computers that allow them to access their emails and browse the Internet. Guests also have access to a printer for a nominal fee.

Our guests’ every wish, whim and want can be fulfilled at our welcoming Reception Desk on Deck 5 in the Atrium. Open 24 hours a day our office staff is happy to answer questions. The ship’s Concierge can be contacted at the Reception Desk as well. He or she is eager to provide guests with general assistance.

Part of what makes a cruise with us so rewarding is the way we augment traditional shipboard activities with bridge instruction and other enhancements. We also offer an excellent lecture series on select voyages. Lecturers provide insight and perspectives far beyond what you would read in the average guidebook. More than a lecture series, this program is completely interactive. Smithsonian Journeys Experts sail for the entire duration of our voyages, allowing for the exchange ideas and social interactions on personal level, from dinners to cocktail parties, in addition to attending insightful talks.
